- Cut the avocado in half, remove the pit, and scoop out the flesh into a blender or food processor.
- Add the lemon juice, Dijon mustard, garlic powder, salt, and black pepper to the blender.
- Blend until smooth. If the mixture is too thick, add water to adjust the consistency.
- Optional: Add olive oil and apple cider vinegar for extra creaminess and tanginess. Blend again until smooth.
- Taste and adjust seasoning with more salt, lemon juice, or Dijon mustard if desired.
- Transfer to a bowl or jar, and refrigerate for at least 30 minutes to let the flavors meld.
