Wet Ingredients
  • 3 large overripe bananas peeled and mashed
  • 0.5 cup unsalted butter melted and slightly cooled
  • 0.375 cup granulated sugar
  • 0.375 cup light brown sugar packed
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 4x8-inch metal loaf pan.
  2. In a large mixing bowl, mash the peeled bananas with a fork. Leave some small chunks for texture.
  3. Pour the melted butter over the mashed bananas and stir until combined. Mix in the baking soda and salt.
  4. Stir in the granulated sugar, brown sugar, beaten egg, and vanilla extract until smooth.
  5. Gently fold the flour into the wet mixture using a spatula. Mix only until the last streak of flour disappears. Do not overmix.
  6. Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean (avoiding any melted banana pockets).
  7. Remove from the oven and let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Expert Tip: Wait until the loaf is completely cool to the touch before slicing. Cutting into it while warm will release the trapped steam and dry out the remaining loaf.
