- Prepare the quinoa and chickpeas as directed. Set them aside to cool.
- Grill the chicken breast until fully cooked and set aside to rest.
- In a bowl, combine the mixed greens, avocado, pumpkin seeds, and chia seeds.
- Prepare the tahini dressing by mixing olive oil, lemon juice, and tahini. Drizzle over the salad and toss to coat.
- Assemble the quinoa bowl with chickpeas, diced cucumber, and red onion. Drizzle with lemon juice.
- Serve the grilled chicken breast alongside cauliflower rice and steamed vegetables.
