Ingredients
  

  • 2 cups Mixed Greens spinach, kale, or arugula
  • 1/2 whole Avocado sliced
  • 1 tbsp Pumpkin Seeds
  • 1 tbsp Chia Seeds
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tbsp Tahini
  • 1 cup Chickpeas cooked
  • 1/2 cup Cucumber diced
  • 1/4 cup Red Onion diced
  • 1 cup Quinoa cooked
  • 1 piece Chicken Breast
  • 1 cup Cauliflower Rice
  • 1/2 cup Broccoli steamed
  • 1/2 cup Carrots steamed

Method
 

  1. Prepare the quinoa and chickpeas as directed. Set them aside to cool.
  2. Grill the chicken breast until fully cooked and set aside to rest.
  3. In a bowl, combine the mixed greens, avocado, pumpkin seeds, and chia seeds.
  4. Prepare the tahini dressing by mixing olive oil, lemon juice, and tahini. Drizzle over the salad and toss to coat.
  5. Assemble the quinoa bowl with chickpeas, diced cucumber, and red onion. Drizzle with lemon juice.
  6. Serve the grilled chicken breast alongside cauliflower rice and steamed vegetables.
