Ingredients
  

Brownie Base
  • 0.5 cup Unsalted Butter melted and cooled
  • 1.5 cups Organic Cane Sugar
  • 1 cup Sour Cream full fat, room temperature
  • 2 large Eggs room temperature
  • 1.5 cups Mashed Bananas about 3-4 overripe bananas
  • 2 tsp Madagascar Vanilla Extract high quality
  • 2 cups All-purpose Flour spooned and leveled
  • 1 tsp Baking Soda
  • 0.75 tsp Sea Salt
Cream Cheese Frosting
  • 8 oz Cream Cheese softened
  • 0.5 cup Butter softened
  • 2 cups Powdered Sugar
  • 1 tsp Vanilla Extract

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, whisk melted butter and sugar. Add sour cream, eggs, and mix until smooth.
  3. Stir in mashed bananas and vanilla extract until well combined.
  4. Fold in flour, baking soda, and salt. Mix just until combined to maintain a fudgy texture.
  5. Pour into pan and bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  6. While brownies cool, beat cream cheese and butter until fluffy. Add powdered sugar and vanilla, beating until smooth.
  7. Frost the cooled brownies and slice into squares.

Notes

Use very spotty bananas for the best flavor. For a crackly top, whisk the sugar and eggs vigorously for 2 minutes before adding other ingredients.
