  • 1 lb diced Chicken breasts
  • 2 medium Bell peppers sliced
  • 1 medium Onions sliced
  • 2 tbsp Fajita seasoning
  • 1 cup Tortilla chips crushed
  • 1 cup Shredded cheddar cheese
  • for serving Sour cream optional
  • for garnish Cilantro optional
  • for serving Lime wedges optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the diced chicken over medium heat until golden brown. Season with fajita seasoning and cook for an additional 5 minutes.
  3. In the same skillet, sauté the bell peppers and onions until softened, about 5 minutes.
  4. In a baking dish, layer the crushed tortilla chips, followed by the cooked chicken, sautéed vegetables, and a layer of shredded cheese. Repeat the layers.
  5. Bake the casserole for 20 minutes or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro, serve with sour cream and lime wedges, and enjoy!
