Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup gourmet chocolate baking cocoa
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon fine sea salt
  • 1 cup whole milk (room temp)
  • 0.5 cup vegetable oil
  • 2 large eggs (room temp)
  • 2 teaspoons organic vanilla bean paste
  • 1 cup boiling water or hot espresso

Method
 

  1. Preheat oven to 350°F (175°C). Grease and parchment-line two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, vegetable oil, eggs, and vanilla. Beat on medium speed for 2 minutes.
  4. Reduce speed to low. Carefully and slowly pour in the boiling water until just combined. The batter will be thin.
  5. Divide evenly into pans and bake for 30-35 minutes until a skewer comes out clean.
  6. Cool in pans for 10 minutes before turning out onto wire racks to cool completely.
