Ingredients
  

Wet Ingredients
  • 3 large Overripe Bananas mashed
  • 1/2 cup Unsalted Butter melted and cooled
  • 3/4 cup Light Brown Sugar packed
  • 1 large Egg room temperature
  • 1 tsp Vanilla Extract pure
Dry Ingredients
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1.5 cups All-Purpose Flour spooned and leveled

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin.
  2. In a large bowl, mash the bananas until smooth. Stir in the melted butter.
  3. Whisk in the sugar, egg, and vanilla until well combined.
  4. Sprinkle baking soda and salt over the mixture, then fold in the flour gently until just combined.
  5. Divide batter into the tin and bake for 18-20 minutes.

Notes

Do not overmix the batter once the flour is added. Use a paper towel in your storage container to prevent soggy tops.
