Ingredients
  

  • Olive Oil
  • 1/2 small onion diced
  • 2 cloves garlic minced
  • 1 cup fire-roasted tomatoes drained
  • 4 oz tomato paste
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 tsp chipotle peppers in adobo sauce chopped
  • 1 tbsp cocoa powder
  • 1 tbsp honey optional

Method
 

  1. In a saucepan, heat olive oil over medium heat and sauté the diced onion for 3-5 minutes until soft. Add minced garlic and cook for 30 seconds.
  2. Add the fire-roasted tomatoes and tomato paste. Stir and let simmer for 2 minutes to combine.
  3. Stir in chili powder, cumin, paprika, chipotle peppers, and cocoa powder. Let the mixture simmer for 10 minutes, stirring occasionally.
  4. Blend the paste using an immersion blender until smooth. Adjust seasoning with honey or more spices as needed.

Notes

This paste is great for tacos, burritos, or as a marinade. Feel free to adjust the heat level by adding more or fewer chipotle peppers!
