- In a saucepan, heat olive oil over medium heat and sauté the diced onion for 3-5 minutes until soft. Add minced garlic and cook for 30 seconds.
- Add the fire-roasted tomatoes and tomato paste. Stir and let simmer for 2 minutes to combine.
- Stir in chili powder, cumin, paprika, chipotle peppers, and cocoa powder. Let the mixture simmer for 10 minutes, stirring occasionally.
- Blend the paste using an immersion blender until smooth. Adjust seasoning with honey or more spices as needed.
Notes
This paste is great for tacos, burritos, or as a marinade. Feel free to adjust the heat level by adding more or fewer chipotle peppers!
