  • 2 cups leftover mashed potatoes You can also use freshly made mashed potatoes.
  • 2 large eggs To bind the mixture.
  • 1 cup shredded cheese (cheddar, mozzarella or mix) More cheese results in a gooier texture.
  • 1/4 cup green onions, chopped For added freshness and flavor.
  • to taste salt Basic seasoning.
  • to taste pepper Basic seasoning.
  • cooking oil or spray for greasing muffin tin To prevent sticking.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the leftover mashed potatoes, eggs, shredded cheese, and chopped green onions. Mix until well incorporated.
  3. Grease a muffin tin thoroughly to prevent sticking.
  4. Scoop the potato mixture into each muffin cup until nearly full. Top with a sprinkle of additional cheese.
Baking
  1. Bake in the preheated oven for about 25 minutes or until the puffs are golden and crispy on the edges.
  2. Let the puffs cool for a few minutes before removing them from the muffin tin.

Notes

Serve hot for the best flavor, but they are still delicious at room temperature. You can customize the recipe by adding crispy bacon, veggies, or different cheeses.
