Preparation
- Preheat the oven to 400°F (200°C).
- Dice the Yukon Gold potatoes and place them in a large mixing bowl.
- Slice the smoked sausage into half-moons and add to the bowl with potatoes.
- Drizzle olive oil over the potatoes and sausage, then sprinkle in the ranch seasoning mix. Toss until evenly coated.
Baking
- Transfer the mixture to a greased baking dish. Optionally, add sliced onions and bell peppers.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, stir the mixture, and sprinkle half of the cheese on top. Bake uncovered for an additional 15 minutes.
- Sprinkle the remaining cheese on top and bake for another 5 minutes until melted and bubbly.
Notes
Let the leftovers cool completely, then store in a sealed container in the fridge for 3-4 days. Great served with a light side salad or as a brunch with a fried egg on top.
