A delicious and simple sandwich made with grilled chicken, creamy avocado mayo, melty cheese, and fresh spinach, grilled to perfection.

Ingredients
  

For the Sandwich
  • 1 cup Grilled Chicken Breast Shredded rotisserie chicken works too.
  • 1 piece Ripe Avocado Can substitute with guacamole.
  • 2 tablespoons Avocado Mayo Regular mayo can be used as a substitute.
  • 1 teaspoon Chipotle Sauce Smoked paprika can be used as a substitute.
  • 1 handful Baby Spinach Arugula can be used as a substitute.
  • 2 slices Sliced Sandwich Bread or Sourdough Whole wheat bread can be used as a substitute.
  • 2 slices Melty Cheese Vegan cheese can be used as a substitute.

Method
 

Preparation
  1. Heat a skillet or panini press over medium heat.
  2. Season the chicken with chipotle sauce or spice mix.
  3. Prepare the avocado mayo or use store-bought.
  4. Slice the avocado.
  5. Butter the outside of the bread slices if desired.
Assembly
  1. Spread avocado mayo on one side of each slice of bread.
  2. Layer with spinach, chicken, avocado slices, and cheese.
  3. Top with the other slice of bread, mayo side down.
Cooking
  1. Place the sandwich in the skillet or panini press.
  2. Cook until the bread is toasted and the cheese is melted, about 3-5 minutes per side.

Notes

For best results, use room temperature ingredients and avoid overstuffing the sandwich. This sandwich reheats well, so you can make extras.
