Ingredients
  

Chicken and Marinade
  • 1 pound boneless, skinless chicken thighs Thighs are juicier than breasts
  • 1 can canned chipotle peppers in adobo Use with some adobo sauce for flavor
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice Freshly squeezed is best
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
  • optional onion powder For a twist
  • optional cilantro, finely chopped For freshness

Method
 

Marinate the Chicken
  1. Combine chipotle peppers, garlic, lime juice, olive oil, cumin, smoked paprika, oregano, salt, and pepper in a blender and blend until smooth.
  2. Pour the marinade over the chicken in a zip-top bag and massage it in.
  3. Refrigerate for at least one hour, preferably overnight.
Cook the Chicken
  1. Heat a grill or skillet over high heat.
  2. Remove chicken from the marinade and cook until charred on both sides and cooked through, about 15 minutes.
  3. Let the chicken rest for a few minutes before slicing or chopping.

Notes

For best results, marinate overnight. Store leftovers in an airtight container for up to three days or freeze for later use. Reheat gently to preserve moisture.
