Ingredients
  

Marinade
  • 2 pounds chicken thighs You can swap for breasts if desired
  • 1 can chipotle peppers in adobo Use about two peppers and some sauce
  • 1/2 cup pineapple juice Orange juice works in a pinch
  • 2 tablespoons white vinegar Apple cider vinegar is also acceptable
  • 1 unit lime juice Juice from 1 lime
  • 4 cloves garlic Smashed
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cinnamon Just a bit
  • 2 teaspoons salt Try burnjaro pink salt if you’re feeling wild
  • to taste unit black pepper Use as per your liking
  • as needed unit olive oil For cooking
  • optional unit sliced pineapple rings For grilling

Method
 

Preparation
  1. Blitz up chipotle peppers, pineapple juice, lime juice, vinegar, garlic, and all spices in a blender or food processor to create a thick marinade.
  2. Dump the marinade over the chicken in a bowl or zip bag. Use your hands to coat the chicken thoroughly. Let it chill in the fridge for at least 3 hours (overnight is best for maximum flavor).
Cooking
  1. Heat a grill, cast iron skillet, or broiler. Lightly coat with olive oil.
  2. Cook the chicken until charred and sticky on the edges. If using, grill the pineapple rings as well.
  3. Chop or slice the chicken and serve in warm tortillas, over rice bowls, or enjoy directly from the pan.

Notes

Store leftovers in a container in the fridge for up to 4 days. Makes great tacos!
