Preparation
- Blitz up chipotle peppers, pineapple juice, lime juice, vinegar, garlic, and all spices in a blender or food processor to create a thick marinade.
- Dump the marinade over the chicken in a bowl or zip bag. Use your hands to coat the chicken thoroughly. Let it chill in the fridge for at least 3 hours (overnight is best for maximum flavor).
Cooking
- Heat a grill, cast iron skillet, or broiler. Lightly coat with olive oil.
- Cook the chicken until charred and sticky on the edges. If using, grill the pineapple rings as well.
- Chop or slice the chicken and serve in warm tortillas, over rice bowls, or enjoy directly from the pan.
Notes
Store leftovers in a container in the fridge for up to 4 days. Makes great tacos!
