Method
- Preheat oven to 350°F and grease your cake pan using oil and flour or pan goop.
- Whisk the dry ingredients together in a large bowl, ensuring the cocoa and flour are sifted.
- Add buttermilk, oil, eggs, and vanilla; mix on medium speed for 2 minutes.
- Slowly pour in hot coffee while mixing on low to bloom the cocoa powder.
- Bake for 30-35 minutes and cool completely before glazing.
- Heat cream and corn syrup, pour over chocolate and butter, let sit for 5 minutes, then stir gently with a spatula until shiny.
Notes
For the shiniest glaze, do not use a whisk as it introduces air bubbles. Use a rubber spatula and stir slowly from the center outward.
