Ingredients
  

Cookie Dough
  • 1 box Pink Velvet Cake Mix 15.25 oz box (or Strawberry/White mix)
  • 0.5 cup all-purpose flour scooped and leveled
  • 2 large eggs room temperature
  • 0.33 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
Cream Cheese Frosting
  • 4 oz cream cheese softened to room temp
  • 0.25 cup salted butter softened
  • 2 cups powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 tbsp pink sprinkles or crumbled cookies for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine the cake mix, extra flour, eggs, oil, and vanilla. Mix until just combined and a thick dough forms. Do not overmix.
  3. Scoop the dough into large balls (approx 3 tbsp each). Roll smooth and place on the baking sheet, spacing them 2 inches apart. Press down slightly to flatten the tops.
  4. Bake for 9-11 minutes. The centers should still look slightly soft. Remove from oven and let cool on the pan for 5 minutes before moving to a wire rack to cool completely.
  5. While cookies cool, make the frosting. Beat the softened cream cheese and butter together until fluffy (approx 3 mins).
  6. Gradually add powdered sugar and vanilla, beating until smooth and pipeable.
  7. Pipe a spiral of frosting onto each cooled cookie and top with sprinkles or crumbs. Serve chilled for best texture.
