Preparation
- Toss 1 or 2 chipotle peppers (with a spoonful of adobo sauce) in a blender along with a cup of heavy cream, garlic, and a pinch of salt. Blend until smooth.
- Heat a big skillet with a dash of oil and sear chicken thighs or breasts on both sides until golden.
Cooking
- Lower the heat and pour the creamy chipotle sauce over the chicken in the skillet. Scrape up any brown bits from the bottom.
- Cover and let simmer for about 12-15 minutes until the chicken is cooked through and the sauce thickens. If it gets too thick, splash in some broth or water.
- Taste and adjust salt or chipotle level before serving.
Serving
- Serve with rice, roasted potatoes, tortillas, or enjoy just with a spoon.
Notes
For added flavor, sear the chicken first. Use a single pan for easy cleanup. Leftovers can be used in wraps or salads.
