Ingredients
  

For the Sauce
  • 1-2 pieces chipotle peppers in adobo sauce Start with half pepper if you're unsure of heat level.
  • 1 cup heavy cream Can also use sour cream or Greek yogurt.
  • 1-2 cloves garlic
  • 1 pinch salt Adjust to taste.
For the Chicken
  • 4 pieces chicken thighs or breasts Use whatever is on sale.
  • 1 dash oil For searing.

Method
 

Preparation
  1. Toss 1 or 2 chipotle peppers (with a spoonful of adobo sauce) in a blender along with a cup of heavy cream, garlic, and a pinch of salt. Blend until smooth.
  2. Heat a big skillet with a dash of oil and sear chicken thighs or breasts on both sides until golden.
Cooking
  1. Lower the heat and pour the creamy chipotle sauce over the chicken in the skillet. Scrape up any brown bits from the bottom.
  2. Cover and let simmer for about 12-15 minutes until the chicken is cooked through and the sauce thickens. If it gets too thick, splash in some broth or water.
  3. Taste and adjust salt or chipotle level before serving.
Serving
  1. Serve with rice, roasted potatoes, tortillas, or enjoy just with a spoon.

Notes

For added flavor, sear the chicken first. Use a single pan for easy cleanup. Leftovers can be used in wraps or salads.
