Method
- Crumble: Place the cooled brownies into a large bowl. Use your hands or a fork to break them down into fine crumbs.
- Mix: Add the softened cream cheese to the crumbs. Mix thoroughly until a thick, moldable dough forms.
- Roll: Scoop about 1 tablespoon of dough and roll into smooth balls. Place on a parchment-lined baking sheet.
- Chill: Freeze the rolled balls for 20 minutes to firm up.
- Melt: Microwave the chocolate (and coconut oil, if using) in 30-second intervals, stirring until completely smooth.
- Dip: Dip each chilled truffle into the melted chocolate, tap off the excess, and return to the parchment paper.
- Set: Immediately sprinkle with reserved crumbs. Let set at room temperature for 10 minutes before serving.
Notes
Chef Luna's Tip: If your dipping chocolate starts to thicken while you work, pop it back in the microwave for 10-15 seconds to loosen it up again. Keep these refrigerated!
