Healthy Avocado Mayo Recipe

Ingredients
  

  • 1 large egg yolk room temperature
  • 1 cup light-tasting avocado oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • Pinch salt

  • Immersion Blender

Method
 

  1. In a small food processor or a tall, narrow jar (for an immersion blender), combine the egg yolk, lemon juice, Dijon mustard, and salt.
  2. Start blending on low speed. While blending, slowly and steadily drizzle in the avocado oil. This is the key to creating a thick emulsion.
  3. Continue to blend until all the oil is incorporated and the mayo has a thick, creamy consistency.
  4. Taste and adjust with more salt or lemon juice as needed.

Notes

For a delicious twist, you can create a healthy avocado oil mayo recipe with a few drops of truffle oil, or add a pinch of garlic powder for a tangy kick.
