Method
 

  1. 1. In a large bowl, whisk all-purpose flour with cold dashi stock until smooth and pourable. Add soy sauce and combine well.
  2. 2. Fold in shredded cabbage, green onions, and any chosen fillings like shrimp or mushrooms. Mix gently to avoid overworking the batter.
  3. 3. Heat a flat pan or griddle over medium-high heat. Lightly oil the surface until it shimmers.
  4. 4. Spoon the batter onto the pan, spreading thinly. Let it cook undisturbed for 4–5 minutes until edges are crispy and the center is set but gooey.
  5. 5. Use two spatulas to chop, scrape, or flip the batter for authentic Monjayaki texture. Continue cooking until desired consistency is reached.
  6. 6. Drizzle with okonomiyaki sauce and Japanese mayonnaise if desired. Top with bonito flakes, green onions, and pickled ginger. Serve immediately and enjoy!
