Ingredients
  

  • 2 lbs Ground Beef 80/20 for juiciness
  • 1/2 cup Almond Flour
  • 2 large Eggs
  • 8 cloves Garlic minced
  • 1/2 large Onion diced
  • 3 oz Tomato Paste
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Italian Seasoning
  • 2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Sugar-Free Ketchup optional for glazing

Method
 

  1. Preheat the oven to 350°F (177°C).
  2. In a large bowl, mix all ingredients except for the ground beef and ketchup.
  3. Add the ground beef and mix gently until well combined. Avoid overmixing.
  4. Transfer the meat mixture into a baking dish and shape into a loaf.
  5. Bake for 30 minutes, then spread the sugar-free ketchup on top and bake for an additional 25-45 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10 minutes before slicing.

Notes

You can customize the seasonings based on your preferences. For a firmer meatloaf, reduce the moisture content or add more almond flour.
