- Heat a skillet over medium heat and add olive oil.
- Reheat the leftover chicken fajita meat in the skillet for 5 minutes, stirring occasionally.
- Add the sliced bell peppers and onions to the skillet and cook for another 5-7 minutes until tender but still crisp.
- If using cauliflower rice, sauté it in another pan with olive oil for 3-4 minutes until tender.
- Serve the fajita meat mixture over cauliflower rice, topped with guacamole and sour cream. Enjoy your low-carb meal!
