  • 1 cup Bell Peppers sliced
  • 1 cup Onions sliced
  • 1 cup Cauliflower Rice optional
  • Fajita Seasoning
  • 1 tbsp Olive Oil for cooking
  • 1 cup Guacamole optional
  • 1 cup Sour Cream optional

Method
 

  1. Heat a skillet over medium heat and add olive oil.
  2. Reheat the leftover chicken fajita meat in the skillet for 5 minutes, stirring occasionally.
  3. Add the sliced bell peppers and onions to the skillet and cook for another 5-7 minutes until tender but still crisp.
  4. If using cauliflower rice, sauté it in another pan with olive oil for 3-4 minutes until tender.
  5. Serve the fajita meat mixture over cauliflower rice, topped with guacamole and sour cream. Enjoy your low-carb meal!
