Ingredients
  

Dry Ingredients
  • 2.25 cups All-purpose flour spooned and leveled
  • 1 tsp Baking soda
  • 0.5 tsp Sea salt
Wet Ingredients
  • 0.75 cup Unsalted butter softened to room temperature
  • 0.75 cup Light brown sugar packed
  • 0.25 cup Granulated sugar
  • 1 Large egg room temperature
  • 1.5 tsp Peppermint extract
  • 2 drops Green gel food coloring adjust for desired shade
Mix-ins
  • 0.5 cup Semi-sweet chocolate chips
  • 0.5 cup White chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, brown sugar, and white sugar until light and fluffy.
  3. Beat in the egg, peppermint extract, and green food coloring until the desired color is reached.
  4. Gradually mix in the flour, baking soda, and salt on low speed until just combined.
  5. Fold in the semi-sweet and white chocolate chips by hand using a spatula.
  6. Scoop 1.5 tablespoon balls of dough onto the sheet and bake for 9-11 minutes. Let cool on the pan for 5 minutes before moving.

Notes

Use gel food coloring instead of liquid to keep the dough consistency perfect and the color vibrant. Do not overbake; the cookies should look slightly underdone in the center when pulled out.
