For the Mint Cookie Dough
  • 1 cup Unsalted Butter softened
  • 1 cup Granulated Sugar plus extra for rolling
  • 1 Large Egg room temperature
  • 1.5 tsp Peppermint Extract
  • 3 drops Green Gel Food Coloring
  • 2.5 cups All-Purpose Flour spooned and leveled
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
For the Topping
  • 36 Hershey's Kisses unwrapped

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and 1 cup sugar until light and fluffy.
  3. Beat in the egg, peppermint extract, and green food coloring until fully combined.
  4. Gradually add the flour, baking soda, and salt, mixing on low until just combined.
  5. Roll dough into 1-inch balls, coat in granulated sugar, and place 2 inches apart on baking sheets.
  6. Bake for 8-10 minutes. Immediately press a chocolate kiss into the center of each warm cookie. Cool on a wire rack.

Notes

Unwrap the chocolate kisses while the cookies are baking to ensure you can press them in before the cookies set. Use gel food coloring for the most vibrant green color.
