Ingredients
  

Cookie Dough
  • 1 cup Unsalted Butter softened
  • 0.75 cup Granulated Sugar
  • 0.75 cup Light Brown Sugar packed
  • 1 large Egg plus 1 egg yolk
  • 1.5 tsp Peppermint Extract
  • 1 tsp Vanilla Extract
  • 2.75 cups All-Purpose Flour
  • 2 tsp Cornstarch
  • 1 tsp Baking Soda
Mix-ins
  • 1.5 cups Oreo Cookies crushed into chunks

Method
 

  1. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Mix in the egg, egg yolk, vanilla, peppermint extract, and green food coloring until a vibrant green color is achieved.
  3. In a separate bowl, whisk the flour, cornstarch, baking soda, and salt.
  4. Gradually add dry ingredients to wet, mixing until just combined, then fold in the Oreo chunks.
  5. Scoop dough into 3-tablespoon balls and chill in the refrigerator for 30 minutes.
  6. Bake at 350°F for 10-12 minutes. Let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

Use gel food coloring for the best color without affecting dough consistency. Don't overbake; the centers should still look soft!
