Ingredients

  • 5 peaches peeled, cored, and sliced (about 4 cups or 600-700g)
  • 3/4 cup granulated sugar (150g)
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter (85g)
  • 1 cup all-purpose flour (120g)
  • 1 cup granulated sugar (200g)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk (180ml)
  • ground cinnamon

Equipment

  • 9x13 Inch Baking Dish

Method

  1. Add the sliced peaches, sugar, and salt to a saucepan and stir to combine. Cook on medium heat for 3-4 minutes, until the sugar dissolves and juices are released from the peaches. Remove from heat and set aside.
  2. Preheat the oven to 350°F (175°C). Add the butter pieces to a 9x13-inch baking dish and place it in the oven while it preheats to melt the butter. Once melted, remove from the oven.
  3. In a large bowl, mix together the flour, sugar, baking powder, and salt. Stir in the milk until just combined. Pour the mixture into the prepared pan over the melted butter, smoothing it into an even layer.
  4. Spoon the peach mixture (with juices) evenly over the batter. Sprinkle cinnamon generously over the top.
  5. Bake at 350°F for about 38-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Serve warm, with a scoop of ice cream if desired.

Notes

For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend. You can also use canned peaches in place of fresh peaches if desired.
