Ingredients
  

Salad Base
  • 3 large Peaches Pitted and cut into wedges
  • 1 pint Cherry Tomatoes Halved
  • 0.5 small Shallot Peeled and thinly sliced
  • 0.5 cup Feta Cheese Crumbled
  • 10 leaves Fresh Basil Chopped
  • 10 leaves Fresh Mint Chopped
Dressing
  • 2 tablespoons Olive Oil Extra virgin
  • 1 tablespoon Red Wine Vinegar
  • 0.5 Lemon Juiced
  • 1 teaspoon Honey
  • 0.5 teaspoon Garlic Powder
  • Salt and Pepper To taste

Method
 

  1. In a small jar or bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, and garlic powder until emulsified. Set aside.
  2. In a large serving bowl, combine the peach wedges, halved cherry tomatoes, sliced shallots, feta cheese, basil, and mint.
  3. Pour the dressing over the salad and gently toss to combine. Be careful not to over-mix to avoid bruising the fruit.
  4. Season with salt and pepper to taste. Serve immediately, or let chill in the refrigerator for 20-30 minutes to allow flavors to meld.
