Pequin Pepper Hot Sauce

Ingredients
  

Base Ingredients
  • 1 cup dried pequin peppers stems removed
  • 4 cloves garlic peeled
  • 1 cup white vinegar
  • 1/2 tsp salt or to taste
  • 1 cup water plus more as needed

Method
 

  1. In a saucepan, combine the pequin peppers and water. Bring to a simmer and cook for 10 minutes to soften the peppers.
  2. Let the mixture cool for 20 minutes to avoid splashing when blending.
  3. Transfer the softened peppers and liquid to a blender. Add garlic, vinegar, and salt. Blend until very smooth.
  4. Optional: Strain the sauce through a fine mesh sieve for a smoother consistency.
  5. Pour into sterilized glass bottles or jars. Refrigerate and use within 2–3 weeks.

Notes

This sauce is fiery! Use sparingly at first. Great on tacos, eggs, or mixed into marinades. You can replace some vinegar with lime juice for a citrusy twist.
