Ingredients
  

  • 1 box (6 oz) Strawberry or Cherry Gelatin
  • 2 cups Boiling Water
  • 1 can (12 oz) Evaporated Milk (Chilled)
  • 0.5 cup Cold Water
  • 1 cup Fresh Raspberries or Strawberries
  • 4 sprigs Fresh Mint

Method
 

  1. Bring 2 cups of water to a rolling boil. Pour into a large bowl, sprinkle the gelatin powder over the top, and whisk continuously for 2 minutes until completely dissolved.
  2. Stir in the 1/2 cup of cold water and let the mixture sit at room temperature for 15 minutes to temper.
  3. Briskly whisk the ice-cold evaporated milk into the warm gelatin mixture until it turns a cloudy, milky pink.
  4. Pour the mixture into a lightly oiled 6-cup mold or individual serving glasses.
  5. Refrigerate uncovered for 1 hour, then cover loosely and chill for an additional 3 to 5 hours until completely firm and the layers have magically separated.
  6. To serve, dip the mold briefly in warm water to loosen, invert onto a platter, and garnish with fresh berries and mint.
