Ingredients

Chicken Fajita Marinade
  • 1 1/2 lbs boneless, skinless chicken breasts cut into thin strips
  • 2 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 2 tsp fajita seasoning store-bought or homemade
  • 1 tsp garlic powder
Vegetables
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 yellow onion sliced
For Serving
  • 8 flour tortillas warmed
  • 1/2 cup sour cream optional topping
  • 1/2 cup guacamole or sliced avocado

Equipment

  • Skillet or Cast Iron Pan
  • Mixing bowl
  • Tongs

Method

  1. In a mixing bowl, combine olive oil, lime juice, fajita seasoning, and garlic powder. Add chicken strips and mix until evenly coated. Marinate for 10 minutes.
  2. Heat a skillet or cast iron pan over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
  3. In the same pan, add sliced bell peppers and onions. Sauté for 4–5 minutes until tender and lightly charred.
  4. Return the cooked chicken to the pan and toss everything together for another minute until flavors combine.
  5. Warm tortillas in a skillet or microwave, then fill them with the sizzling fajita mix. Add sour cream, guacamole, or your favorite toppings.
  6. Serve hot and enjoy this simple chicken fajita recipe by Chef Luna — bursting with authentic flavor and vibrant color.

Notes

Chef Luna recommends marinating the chicken longer (up to 30 minutes) for extra juiciness. You can also use boneless chicken thighs for richer flavor. For a low-carb version, serve the fajita mix over lettuce instead of tortillas.
