- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan generously with non-stick spray or line with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a medium bowl, whisk together the eggs, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. The batter will be thick.
- Fold in the chopped apples until evenly distributed in the batter.
- Spread batter into the prepared pan. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and a pinch of salt. Beat until fluffy.
- Spread frosting over the cooled cake. Drizzle generously with salted caramel sauce before serving.
