- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugar until light and fluffy. Add eggs one at a time, followed by the vanilla extract.
- Gradually mix in the flour, baking powder, and salt until just combined. Do not overmix.
- Scoop large portions of dough onto the baking sheet and bake for 12-14 minutes until the edges are just set.
- Allow cookies to cool completely before applying a thick layer of green buttercream and topping with sprinkles.
