Ingredients
  

  • 1 cup Unsalted Butter (softened)
  • 1.5 cups Granulated Sugar
  • 2 large Eggs
  • 1 tbsp Pure Vanilla Extract
  • 3.5 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 1 batch Green Vanilla Buttercream Frosting
  • 0.25 cup Shamrock Sprinkles

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter and sugar until light and fluffy. Add eggs one at a time, followed by the vanilla extract.
  3. Gradually mix in the flour, baking powder, and salt until just combined. Do not overmix.
  4. Scoop large portions of dough onto the baking sheet and bake for 12-14 minutes until the edges are just set.
  5. Allow cookies to cool completely before applying a thick layer of green buttercream and topping with sprinkles.
