Method
- Measure Rice Chex into a very large bowl and set aside.
- Melt white chocolate chips and butter in the microwave in 30-second increments until smooth. Stir in vanilla, salt, and green gel food coloring.
- Pour the green chocolate over the cereal and fold gently with a spatula until evenly coated.
- Transfer coated cereal to a large plastic bag with powdered sugar. Shake well until every piece is white and frosted.
- Spread the mix onto a parchment-lined sheet. Immediately top with M&Ms and shamrock sprinkles.
- Let the mix set for 20 minutes before serving or storing in an airtight container.
Notes
Use gel food coloring to prevent the chocolate from seizing. Sift the finished mix to remove excess sugar for a cleaner look.
