Ingredients
  

For the Sugar Cookie Base
  • 1 cup Unsalted Butter softened
  • 1.5 cups Granulated Sugar
  • 2 Large Eggs room temperature
  • 1 tbsp Vanilla Extract
  • 0.5 tsp Almond Extract
  • 3 cups All-Purpose Flour
  • 2 tbsp Cornstarch
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
For the Green Frosting
  • 0.5 cup Unsalted Butter softened
  • 3 cups Powdered Sugar plus more if needed
  • 2 tbsp Heavy Cream
  • 1 tsp Vanilla Extract
  • 2 drops Green Gel Food Coloring

Method
 

  1. Preheat oven to 350°F and line a 9x13 inch pan with parchment paper.
  2. Cream the butter and sugar together until light and fluffy. Add eggs, vanilla, and almond extract, mixing until combined.
  3. Whisk together flour, cornstarch, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Press dough into the pan and bake for 20-25 minutes until the edges are very lightly golden. Cool completely.
  5. Make the frosting by beating butter, powdered sugar, cream, vanilla, and green food coloring until light and airy.
  6. Spread frosting over cooled bars, add sprinkles, and cut into squares to serve.

Notes

For the softest bars, ensure you do not overbake. They should look slightly underdone when removed from the oven. Using gel food coloring is essential for that bright green color without making the frosting runny.
