Bell Peppers
  • 4 medium bell peppers Cut the tops off and remove seeds.
  • 1 cup quinoa Cooked
  • 1 cup black beans Cooked or canned, drained
  • 1 cup cheddar cheese Shredded
  • 1 tsp cumin
  • 1 tsp paprika

Method
 

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a bowl, mix cooked quinoa, black beans, shredded cheddar cheese, cumin, and paprika.
  3. Stuff the bell peppers with the quinoa mixture, then place them in a baking dish.
  4. Cover with foil and bake for 25 minutes. Remove the foil and bake for another 5 minutes, until the cheese is bubbly.
