- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix cooked quinoa, black beans, shredded cheddar cheese, cumin, and paprika.
- Stuff the bell peppers with the quinoa mixture, then place them in a baking dish.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for another 5 minutes, until the cheese is bubbly.

Feel free to swap out ingredients based on your preferences. You can use brown rice instead of quinoa or try different types of cheese!
