Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Melt the dark chocolate and butter together in a double boiler or microwave. Stir until smooth and set aside to cool slightly.
- In a stand mixer, whisk eggs, granulated sugar, and brown sugar on medium-high for 5 minutes until thick and pale.
- Pour in the melted chocolate mixture and vanilla; whisk until combined.
- Gently fold in the flour, cocoa powder, baking powder, and fine salt with a spatula until no dry streaks remain.
- Scoop rounded tablespoons of batter onto sheets and bake for 10-12 minutes until edges are set.
- Sprinkle with flaky sea salt immediately and let cool on the pan for 10 minutes.
Notes
Whisking the eggs and sugar for the full 5 minutes is the key to the crinkle top. Do not skip this!
