- Preheat the air fryer to 400°F (200°C).
- In a mixing bowl, toss the diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Add the potatoes to the air fryer basket in a single layer. Cook for 10 minutes, shaking the basket halfway through.
- Reduce the temperature to 375°F (190°C). Add the diced bell pepper, onion, and chopped bacon to the basket. Toss to combine and cook for 5 to 7 minutes until the bacon is crisp.
- Using a spoon, create 4 small wells in the potato mixture. Carefully crack an egg into each well. Season the eggs lightly with salt and pepper.
- Return the basket to the air fryer and cook for 4 to 6 minutes, depending on your preferred level of yolk doneness.
- Remove carefully, garnish with fresh herbs if desired, and serve immediately.
