Ingredients
  

Dry Spice Base
  • 1 tbsp Chili powder Mild or medium ground chili powder
  • 1 tbsp Ground cumin Freshly ground preferred
  • 1 tsp Smoked paprika Spanish sweet smoked paprika
  • 1 tsp Garlic powder Granulated garlic
  • 1 tsp Onion powder Granulated onion
  • 1 tsp Dried Mexican oregano Crushed between palms
  • 1 tsp Cornstarch Binds spices to meat pan juices
  • 1/2 tsp Kosher salt Adjust salt to taste
  • 1/4 tsp Freshly cracked black pepper Medium coarse grind
  • 1/4 tsp Cayenne pepper Optional for added heat

Method
 

  1. Measure out all ground spices, herbs, salt, and cornstarch into a glass bowl.
  2. Whisk vigorously with a miniature wire whisk for 30 to 45 seconds until uniform and completely clump-free.
  3. Transfer to an airtight glass spice jar and store in a cool, dry pantry for up to 6 months.
  4. To cook: Coat 1.5 lbs of sliced chicken with 1 tbsp oil, then sprinkle 2 tbsp of seasoning over poultry and toss to coat thoroughly before searing.

Notes

For optimal flavor release, bind spices to meat using oil before placing in high-heat cookware to prevent paprika scorching.
