Ingredients

Wet Ingredients
  • 3 large Overripe Bananas mashed
  • 0.5 cup Unsalted Butter melted and cooled
  • 0.75 cup Granulated Sugar
  • 1 Large Egg room temperature
  • 1 tsp Vanilla Extract pure
Dry Ingredients
  • 1.5 cups All-Purpose Flour spooned and leveled
  • 0.5 cup Dutch-Process Cocoa Powder sifted
  • 1 tsp Baking Soda
  • 0.25 tsp Salt
  • 1 cup Semi-Sweet Chocolate Chips divided

Method

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth. Stir in the melted butter.
  3. Whisk in the sugar, egg, and vanilla extract until well combined.
  4. Sift in the flour, cocoa powder, baking soda, and salt. Fold gently with a spatula until just combined.
  5. Fold in 1/2 cup of chocolate chips. Pour batter into the prepared pan.
  6. Top with the remaining 1/2 cup of chocolate chips. Bake for 55-65 minutes until a toothpick comes out clean.

Notes

Use Dutch-process cocoa for the darkest color. Do not over-mix the batter to maintain a tender crumb.
