Ingredients
  

Chocolate Cookie Base
  • 1 1/2 cups all-purpose flour 190 g, spooned and leveled
  • 1/2 cup unsweetened Dutch-process cocoa powder 45 g
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter 113 g, softened
  • 3/4 cup light brown sugar 150 g, packed
  • 1/4 cup granulated sugar 50 g
  • 1 large egg Room temperature
  • 1 teaspoon vanilla extract
Cheesecake Filling
  • 8 oz full-fat brick cream cheese 226 g, softened
  • 1/3 cup powdered sugar 40 g, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy whipping cream 15 ml
Chocolate Spiderweb Decoration
  • 2 oz semisweet chocolate 57 g, finely chopped
  • 1/2 teaspoon neutral oil Optional, to thin melted chocolate

Method
 

  1. Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper and position the oven rack in the center.
  2. In a medium bowl, whisk together the flour, Dutch-process cocoa powder, baking soda, and salt until evenly combined.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar for approximately 2 minutes until creamy. Add the egg and vanilla extract, then beat until smooth.
  4. Gradually add the dry ingredients to the butter mixture. Mix on low speed just until a soft chocolate cookie dough forms. Avoid overmixing. If the dough is unusually sticky, refrigerate for 10 to 15 minutes.
  5. Divide the dough into 16 equal portions, approximately 2 tablespoons each. Roll into balls and arrange eight portions per baking sheet, leaving about 2 inches between cookies.
  6. Bake one sheet at a time for 10 to 12 minutes, until the edges are set and the centers remain slightly soft. Immediately press a shallow indentation into each warm cookie with the back of a rounded tablespoon. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Repeat with the second batch and allow all cookies to cool completely.
  7. For the cheesecake filling, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, then mix until creamy. Add heavy cream and beat briefly until the filling is thick and spreadable.
  8. Spoon approximately 1 tablespoon of cheesecake filling into the center of each completely cooled cookie. Smooth with a teaspoon or small offset spatula, leaving a visible chocolate border around the filling.
  9. Melt the semisweet chocolate in a microwave-safe bowl using 15-second intervals, stirring between each interval. Add the optional neutral oil if needed. Let the chocolate cool slightly, then transfer to a piping bag with a tiny opening.
  10. Working one cookie at a time, pipe three or four thin concentric chocolate circles onto the cheesecake filling. Use a clean toothpick to drag lines from the center outward six to eight times, creating a spiderweb. Wipe the toothpick between strokes. Repeat with the remaining cookies.
  11. Refrigerate the decorated cookies for approximately 15 minutes, or until the chocolate decorations are set. Serve chilled or cool. Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.

Notes

Expert Tips: Use full-fat brick cream cheese for a thicker cheesecake filling. Measure flour carefully to prevent dry cookies. Do not overbake the chocolate cookie bases; the centers should remain slightly soft when removed from the oven. Always cool cookies completely before adding the cheesecake mixture. Pipe and finish each chocolate spiderweb individually before the chocolate sets.
Timing: Total time includes approximately 30 minutes of preparation, 24 minutes of baking across two batches, and 40 minutes for cooling and chilling. Additional dough refrigeration, if necessary, will increase total time.
Variations: Replace 2 tablespoons of regular cocoa powder with black cocoa for darker cookies.
